Here’s a really special recipe for what we think is the apex of matcha brownies.

All the matcha brownies boxes are ticked in Rachel’s recipe, starting with that most edifying ‘snap’ as you bite through the sugary, caramelized crust into a moist, dense and gooey center.

What sets our matcha brownies apart is that the all-important Brownie chew factor (not an officially recognized measurement, but a very important one in our opinion) is ramped up with the addition of Mochi - the Japanese rice cake that’s made by pounding glutinous rice, flavored in this case with chocolate, into a tender, sticky cake. In addition, the matcha gives fudge-textured cakes an invitingly verdant ‘eat me!’, hint. Maybe we should call these matcha brownies - greenies?

Whatever you chose to call them, these are ultra indulgent slices of luxury that you might need to find a lock for the cake tin.

Talking of indulgences - the chocolate content may give you cause for a double take. Try and look at it the way we justify it at the Ocha & Co office - it’s good for you. Like matcha, chocolate is a great source of antioxidants, and has been found to help lower blood pressure and even increase “good” cholesterol. The darker chocolate the better its anti-inflammatory properties, too.

Combined with all the well-known feel-good benefits of the matcha powder you’ll be adding to the ingredients, these matcha brownies - in moderation of course - should, by right, be prescribed by doctors!

Makes one 8x8 inch matcha brownie square

85 g white chocolate

85 g butter

350 g milk

2 eggs

150 g sugar

180 g mochi powder

15 g matcha powder

1 tsp baking powder

Directions for Matcha Brownies

Preheat the oven to 350°F degrees. Prepare an 8” x 8” baking pan with parchment paper.

Microwave the white chocolate with the butter in 30-second intervals. Stir and microwave for another 30 seconds.

In a large bowl, whisk milk and eggs together. Whisk in the melted chocolate.

Sift in the dry ingredients and mix until just combined.

Pour the batter into the baking pan.

Baking Matcha Brownies

Bake for 50 to 60 minutes until edges are browned and a toothpick inserted comes out clean.
